60g coconut oil
4 tbls brown rice syrup
2 tsp vanilla paste
170g sunflower seeds
5 tbls coconut flour
1 tsp bicarbonate of soda
70g 100% dark chocolate chips
Preheat oven to 180 degrees
In a food processor blend together sunflower seeds, bicarbonate of soda and coconut flour to a fine flour.
In a separate bowl, whisk together melted coconut oil, egg, vanilla, and brown rice syrup.
Once combined add to the dry ingredients.
Add in the chocolate chips.
On a lightly coconut floured surface, with a rolling pin, roll out the cookie dough to about half inch in thickness. Use a cookie cutter of choice cut to cut your cookies!
Line a flat baking tray with non stick paper.
pop the cookies on the tray and bake for 10 minutes.
Allow to cool on a wire rack.
