Sally’s Avocado Brownies

Ahhhhhhhh the chocolate brownie! Be prepared to be blown away by these bad boys!

As a nod to ‘our Sally’ and everything she does for us, these had to be the first recipe I shared with you guys. I would not be able to function half as well as I do as a mother, wife and your health coach without Sally in our world. She keeps us all in seamless working order and importantly, our boy’s safe and well on a level that exceeds even my expectations – and that really is going somewhere.

Sally turned some sad looking avocados, that were going to waste, into these beautiful brownies. Oh my, they blew our socks off, kids and grown-ups alike! They are the best tasting ‘healthy’ brownie I have ever tried – hands down!

These are super easy to make and a great way to sneak some avocado into any fussy eaters in the house.

Ingredients

2 tbsp coconut oil

50g dark chocolate (we used 85{64080e83780b8519c5a8cac6c08ca2851258cdce844232532141ddc1c5c5de07})

Optional – save a little for the chocolate drizzle

4 dates

3 small avocados

½ cup of almond flour

½ cup of coconut flour

2 eggs

¼ cup cacoa power

¼ cup of sugar alternative – we used xylitol

1 tbsp vanilla

¼ cup of milk alternative

1 tsp bicarbonate of soda

1 tbsp maple syrup

Instructions

Melt down chocolate and coconut oil. (Optional: Save a small amount for the drizzle at the end!)

Blend together avocado and dates.



3. |

Add all the other ingredients and blend.

Pour in the chocolate and oil and blend.

Add a little more milk if needed.

Bake in pre heated oven at 165 degrees for 25 minutes.

Allow to cool.

Optional – drizzle a small amount of melted chocolate over the top.
