High Protein Banana Bread

This beautiful sweet treat is guilt free! No refined sugar, gluten or dairy and is packed full of nutritious organic whole foods.
Enjoy toasted for breakfast, add it to lunch boxes or enjoy as an afternoon ‘pick me up’ with a nice cup of tea!


Ready in

3 large overripe bananas

1 small banana for the top

1/3 cup melted coconut oil

1/4 cup of coconut milk (mylk)

2 eggs

1 tsp vanilla

1 tsp orange essence

1/2 cup of honey

1 cup gluten free or buckwheat flour

1/2 cup of vanilla clean lean protein – we have used @nuzest

1 tsp bicarb of soda

1/2 tsp salt

Place the bananas in a large bowl, with the back of a fork mash the bananas.

Add in all the wet ingredients to the banana mix and combine.

Now add in your flour and other dry ingredients and mix well.

Spoon out the mixture into an oiled bread loaf tin smooth down the top with a spatula.

slice the small banana longways down the middle place the the two pieces of banana middle side up on top of the cake batter.

Pop the cake into a preheated oven at 170 degrees for 50 minutes.

Allow banana bread to cool fully before slicing.
